Food Safety Practices for Retailers

The responsibility for food safety is shared by all personnel in a food business. Commitment from the full management team requires involvement from procurement, logistics and stores, not just the technical team.

Effective and consistent food safety and quality requires an entrenched understanding and consistent application of food safety practices. Designed for retailer stores, this course will provide an overview of what food safety is, why it is important and what controls need to be implemented.

The course content is based on the R638 (South African Regulations governing general hygiene requirements for food premises and the transport of food), the SANS 10049 (South African Standard for Pre-requisite Programmes), ISO/TS 22002-2 (PRPs on food safety- Part 2: Catering) and GFSI (Global Food Safety Initiative) requirements.

Upon completion, you will have an excellent understanding of how a food safety management system should work and the importance of your role in supporting the implementation of food safety practices in your store.
