MASTERCLASS IN FOOD SAFETY AUDITING

A major oversight in the Food Industry is that food safety audits are not done to the right detail. This is mainly because of a lack of experience  and technical knowledge by auditors and lack of understanding of food safety by top management. Auditors typically resort to becoming slaves of checklists and often an audit is no more than shifting papers around between files. Auditors fail to get their hands dirty and assess true food safety conditions on the factory floor. First party (internal audits), second party (supplier audits) and third party (certification audits) are all implicated. This often results in a false sense of security of the effectiveness of a company’s food safety program.


Following very successful, sold-out workshops in 2011, 2012 and 2014, this event is back at the Agrifood Technology Station at the Cape Peninsula University of Technology. The workshop will include first-hand instruction on how to conduct an audit using the well-equipped Food Pilot Plant at CPUT as an interactive assessment venue. Topical issues will be addressed including auditing FSSC version 4, what to look for in terms of food fraud and auditing for Listeria.


The cost of this 2 day workshop is R2 600 pp ex VAT. A light lunch & refreshments is included.
