Our Food Safety Frustrations continue. Take a look at this one shared by one of our followers:

"The hand swabs. They're a very frustrating. They're always up and down and just when you think you've nailed it, the results turn up out of spec - enough to drive you insane"

Our Entecom Gauteng Team responds with the following suggested solution:

The objective of the handswabs needs to be clear. If the objective is to verify that the hand washing practices are correctly implemented, then it might be that the results indicate the state of personal hygiene practices are inconsistent. Something to consider would be checking the actual organisms which are detected on staff hands such as the presence of E.coli and Staphyloccocus aureus when the results are out of spec.
Take two swabs from the same hand (before washing and after washing). This is to confirm that the hand washing technique and sanitiser is effective. 
 Ensure that staff follow the correct hand washing steps, allowing the sanitiser to dry after  sanitising, then take hand swabs when the sanitiser is completely dry.
Controls for the swabs need to be taken to verify the sterility of the swabs, this is done by sending one or two unused swabs to the Laboratory. Ensure that you use the aseptic sampling technique and that swabs are kept below 5ºC and tested within 24 - 48 hours.
